Streams in the Desert Reflexology & Wellness


I experiment quite a bit when I cook. I’m mostly self-taught based on trial and error. Sometimes I dream up wonderful recipes that turn out to be total doozies. But sometimes I come up with something that turns out even better than I hoped! This was one of those recipes where I was very happy with the outcome.
I came up with this recipe idea the other day, trying to think of some ways to get some tasty variety in my diet. Sometimes when you are eating strict for your health, things can get a little monotonous and we need to be inspired. I was thinking of P.F. Chang’s breaded lemon chicken dish they used to have (which was my favorite and they stopped making it!), but I decided to try an orange flavor paired with thyme, and using coconut flour and flakes for the breaking instead of a grain-based breading.
This is a quick and easy dish that is sure to please both adults and the kids!


1 lb organic chicken breast tenders
1/3 c avocado oil
1/3 c coconut flour
2/3 cup shredded coconut
1 Tbsp arrowroot flour
1 Tbsp dried orange peel
1/2 tsp organic thyme
1/2 tsp pink Himalayan salt
Organic raw (or very low heat processed) honey


Preheat oven to 375 degrees.
Place avocado oil in a small bowl.
In a medium bowl, mix the coconut flour, shredded coconut, arrowroot flour, orange peel, thyme, and salt together.
Dunk the chicken tenders in the avocado oil, then into the dry mixture (coating completely). Place the coated chicken tenders in a glass baking dish. Bake for 10 minutes, then flip and bake another 10 minutes (may need slightly more or less depending on the thickness of the chicken).
Drizzle with honey and enjoy. I recommend Heavenly Organics Wild Neem Honey as a delicious pair with this entree 🍯 I suggest a side of sesame broccoli to go along with these sweet chicken tenders.
