Mango Avocado Topping

This recipe is sure to add some flavor to your life!  This is great as a topping to my Chicken-Mango-Avocado Stuffed Sweet Potatoes, but can also be added as a topping for cod or flounder, or as a stand alone chip dip!  It’s really yummy paired with Siete Lime Grain-Free Tortilla Chips!

Ingredients:

1 large (or 2 small) avocados

1 organic mango

1 Tbsp unsweetened coconut yogurt

Fresh juice from 1/2 organic lime

1/2 bunch organic cilantro

1/2 tsp pink Himalayan salt

Directions:

In a small mixing bowl, mash up the avocado (P.S. avocados are pretty safe to get non-organic, so spend your organic $$ on other more important items!).  Add in the lime juice, coconut yogurt and salt.  Mix in thoroughly.  Then stir in the cilantro and mango.  Viola!  You’re done!
