It is super important to limit exposure to harmful pesticides and GMO’s by eating organic as much as possible. This is intimidating to so many because it means cooking and eating at home more. But cooking healthy doesn’t have to mean elaborate two-hour meals! You can make some really simple and delicious meals in 30-45 minutes. My favorite thing to do is chunk a bunch of stuff in a baking dish or skillet and let it cook for 30 minutes while I get an evening workout or dog walk in! Then voila! It’s ready when I get back home!
This is one of those quick and easy (yet still delicious and nutritious) dishes.
1 Tbsp organic ghee
4 organic boneless skinless chicken thighs
One bunch organic broccolini
1 medium organic sweet potato, cut into 1/4″ thick pieces so will cook quickly
1 tsp pink Himalayan salt
1/2 tsp Italian seasoning
1/2 tsp organic garlic powder
1 organic lemon, sliced
Melt the ghee in large skillet. Add the chicken. Season with salt, garlic, Italian seasoning and place lemon slices on top. Add the broccolini and sweet potatoes around the chicken. Simmer all on low for 30 minutes. Turn up to medium for about 5 minutes to be sure chicken is cooked throughout.
Serve and enjoy feeling good from eating good, clean food! Simple as that 🙂
